These small farms primarily grow the Caturra variety and process their coffee using traditional methods. The processors use hand-operated depulping machines to remove the outer skin from the coffee beans, and they utilize elevated drying beds to dry the coffee, allowing for ideal airflow and even drying.

Farmers closely control every stage from cultivation, harvesting, to processing. Their efforts have been rewarded with Rainforest Alliance certification, one of the highest standards in sustainable agriculture.
